With Casa Maguey, Mr. Santana intends to bring exciting new flavors and cooking styles to traditional Mexican food. To achieve this, Mr. Santana enlisted the services of Executive Chef Jose Luis Torres, to design Casa Maguey’s menu and to oversee its evolution. Chef Torres is famous for his insistence on using only the freshest local fruits and seasonal vegetables in his sauces and salsa.
